How to Smoke Peanuts

Peanuts or groundnuts can be boiled, smoked or expressed for oil. The five major cultivar groups grown in the United States are Spanish, Runner, Valencia, Virginia and Tennessee Red & White Groups. Peanuts are an excellent source of dietary fiber as well as niacin, folate, magnesium and vitamin E. They contain no sodium or trans-fats, and have a higher proportion of proteins than any other true nut. Other beneficial contents of peanuts are antioxidants, resveratrol and coenzyme Q10. Peanuts can be smoked inshell or shelled, although it takes longer to roast the former.

Step 1

Put the water, peanuts, salt, sugar and liquid smoke in a pot. Bring the brined peanuts to a boil, and keep cooking for 20 minutes to infuse the flavors. Drain the peanuts in a colander, and let it stand for 20 minutes.

Step 2

Preheat the grill to 225 degrees Fahrenheit.

Step 3

Place aluminum foil on the grill rack. Puncture small holes in the foil to allow the smoke to pass through.

Step 4

Place the brined peanuts on the foil. Cover the grill, and smoke for 20 minutes.

Step 5

Turn the peanuts over, and smoke for another 20 minutes. Repeat this one more time.

Step 6

Transfer the peanuts to absorbent paper to cool. Serve immediately.

  • 6 cups water
  • 2 lbs. raw peanuts, inshell
  • 2 cups salt
  • 2 tbsp. granulated sugar
  • ½ cup liquid smoke
