How to Cut a Bone-In Pork Loin for Ribs

A pork loin is one of the more expensive cuts of meat. Buying a bone-in pork loin will leave you with options on how to butcher the meat. You can create bone-in ribs and center cut loin chops, baby back ribs and a standing pork loin rib roast out of a single bone-in pork loin roast. Once you buy the whole cut of meat, you will ultimately save money on the different cuts rather than if you bought the meat separately.

Step 1

Rinse the pork loin under cold running water. Pat the meat dry with a paper towel.

Step 2

Place the loin on a cutting board, rib side up. Remove the short chine bones on the side of the loin with the knife.

Step 3

Cut the loin meat from the ribs perpendicularly about 1 inch away from the rib bones, removing the majority of the center loin.

Step 4

Use the sharp knife to cut through the meat beside the bone at a spacing of every four ribs for smaller racks.
