Mochi ice cream, often referred to as chewable ice cream, is coated in a soft, sweet sheet of dough. This sheet of dough, known as mochi, allows you to hold the ice cream in your hands and bite into it as you would a donut. When you make chewable ice cream, use your favorite flavor or brand. Use low or non-fat ice cream if you would like to cut fat and calories from the dessert. Additionally, you can add a drop of food coloring to the batter to dress up the chewable ice cream's appearance.
Step 1
Coat a large cutting board in an even layer of cornstarch. Set the cornstarch-coated cutting board aside.
Step 2
Pour the sweet rice powder into the mixing bowl and add the water. Whisk the water into the sweet rice powder until it forms an even consistency.
Step 3
Add the sugar to the mixture in the bowl and whisk until it blends into the batter.
Step 4
Cover the bowl with a sheet of plastic wrap and poke a hole in the center. Place the bowl into a microwave set to high. Microwave it for 2 minutes.
Step 5
Remove the bowl from the microwave and stir it for 10 seconds with a wooden spoon that has been dipped in water. Replace the plastic wrap and microwave the batter on high for an additional minute.
Step 6
Remove the bowl from the microwave. Dip the wooden spoon in water once more and stir the batter for 30 seconds.
Step 7
Pour the batter out of the bowl and onto the cutting board. Use the wooden spoon to help get all of the batter out of the bowl.
Step 8
Sprinkle an even layer of cornstarch over the batter and flip it over. Grab the edges of the batter and stretch it to form a 1/4-inch thick sheet of dough.
Step 9
Coat a rolling pin in cornstarch and roll the dough sheet out until it is 1/8-inch thick.
Step 10
Use a serving bowl to cut the sheet of dough into four to six round pieces. Discard leftover dough or save it for another use.
Step 11
Place equal amounts of the ice cream into the center of each round sheet. Fold the edges of a round sheet around the ice cream in the center, forming a ball. Pinch the edges together to secure the dough around the ice cream. Flip the ball over and set it onto a baking sheet, exposing the smooth surface. Repeat with the remaining round pieces and ice cream.
Step 12
Place the baking sheet into the freezer for at least three hours. Remove the chewable ice cream from the freezer to soften for at least 10 minutes before eating it.
Tips and Warnings
- If you do not intend to consume the chewable ice cream within 12 hours, cover the baking sheet with plastic wrap so it does not dry out. To cut calories and reduce sugar content, you can use 1/2 cup of a granulated sugar substitute in lieu of the sugar.
