How to Cook Ireland's Steak & Biscuits

Irish cuisine is traditionally a hearty blend of simple ingredients. Most Irish dishes are made from the basic structure of meat, vegetables, and starch. In many dishes, potatoes take the forefront as the starch source, however there are many lesser known recipes which are based upon the traditional Irish biscuit. Compared to the light cream sauce used for traditional steak and biscuits, the Irish version is a dark broth with a deep, rich, flavor profile. Using a dark beer base, this steak and biscuit recipe is a quick and convenient way to enjoy a traditional Irish classic.

Step 1

Prepare a box of biscuit mix according to package directions, but make the biscuits about half the recommended size and bake for minutes less than instructed.

Step 2

Combine one bottle of dark beer, 2 tbsp. beef stock, two cloves of crushed garlic and 2 tsp. each of salt, pepper and dried rosemary in a large stew pot and bring to a low simmer over medium heat.

Step 3

Preheat a pan over medium-high and cut 3 lbs. of flank steak into 1 1/2-inch chunks. Sear the pieces along with two chopped carrots, a chopped small onion, and a chopped turnip until the steak begins to brown.

Step 4

Add the meat and vegetable mixture to the simmering beer and bring back to a simmering boil. Reduce heat and allow the mixture to simmer for 15 to 20 minutes.

Step 5

Combine 2 tbsp. each of butter and flour in a small bowl to create a roux. Reduce the heat to low and stir the roux into the pot. Stir gently for two to three minutes, or until desired thickness is achieved.

Step 6

Place three of the small biscuits into a serving bowl and spoon the hot stew over top.

Tips and Warnings

  • Using a very dark beer will create a stronger, richer flavor. Using a light lager will create a refreshing, lighter flavor. To add a stronger flavor, don't add different spices to this recipe. Instead, try using more garlic or black pepper to add punch to the flavor.
