How to Cook a Wild Pig Roast

Wild pig meat is leaner and contains less fat than the pork from domestic pig. Therefore, it takes longer to fully cook a wild pig roast. However, wild pig roast is healthier than domestic pork because it contains less fat and cholesterol. Because wild pig is essentially game meat, it tastes like it and people who prefer this taste of game meat love wild pig roast dishes.

Step 1

Heat the oil in a large saucepan, and sauté the onions over medium heat until they look transparent and soft.

Step 2

Add the garlic, juniper berries, coriander seed and bay leaf to the saucepan, and sauté for another three minutes.

Step 3

Add the tomatoes, water, vinegar, honey, salt, crushed and ground chile. Cover the saucepan, and simmer for 30 minutes.

Step 4

Add the chocolate and simmer for 30 minutes more until the sauce mixture thickens.

Step 5

Preheat the oven to 350 degrees Fahrenheit.

Step 6

Place the wild pig roast on a roasting pan with its fat side up. Baste liberally with the sauce.

Step 7

Place the roasting pan in the oven, and cook for three hours. Baste the roast regularly with more sauce and the fat drippings on the pan.

Step 8

Remove the roast and let it sit for 10 minutes before serving. Carve the roast and cover the slices in the sauce.

  • ¼ cup vegetable oil
  • 1 ½ cup chopped onions
  • 3 garlic cloves, minced
  • 4 dried juniper berries, crushed
  • ½ tsp. coriander seed, crushed
  • 1 bay leaf
  • 4 large tomatoes, quartered and seeded
  • 1 ¼ cup water
  • 2/3 cup cider vinegar
  • ½ cup honey
  • 2 tsp. salt
  • 1 tbsp. ground red chile
  • 1 dried medium-hot red chile, crushed
  • 1 oz. squared unsweetened chocolate, grated
  • 5 lb. wild pig rib roast
