The Epstein Barr virus (EBV) can cause a syndrome where the most common symptoms are a sore throat, extreme fatigue, swollen lymph nodes and a fever, states the Merck Manual website. The virus is present worldwide in 95% of adults and can lead to mononucleosis. Mononucleosis does not have a cure and usually resolves on its own. However, EBV will remain dormant in mononucleosis sufferers for the remainder of their lives. A special diet may help ameliorate the EBV symptoms.

Liquids

The Mayo Clinic recommends that people who are infected with EBV and suffering with mononucleosis make an effort to stay hydrated. This will reduce a fever, soothe a very sore throat and prevent dehydration which can lead to other complications. Water and fruit juice will provide some nutrients and hydration while the body fights off the infection. Broths, soups and herbal teas may also help soothe symptoms. Mononucleosis is spread by close contact, so the infected person should not share tableware with others.

Foods

Other symptoms caused by EBV include a swollen spleen and liver in some people. While there is no cure for this virus, boosting the immune system with a well-balanced diet may aid the body in fighting the infection and protecting affected organs. A healthy diet includes low-fat protein and dairy products and colorful fruits and vegetables. Healthy fats such as those in nuts, seeds and avocados are also an integral part of a healthy diet.

Soft Food Diet

It may be necessary to eat soft foods for awhile if the sore throat persists. An EBV infection may also cause a loss of appetite along with a sore throat and fever. Healthy favorite foods can be chopped or pureed to make swallowing and digestion easier and to keep the patient eating. For example, fine ground meatloaf may be easier to swallow than steak, and applesauce may be more appealing than a whole apple.

Foods to Avoid

High-carbohydrate foods such as bread, sugar, rice and pasta can cause inflammation in the body, worsening a sore throat and swollen lymph nodes and organs. They also cause a spike and then crash in blood sugars, resulting in fatigue and a desire for more sugar. Coffee, caffeinated tea, alcohol and junk food are also a problem because they may provide caffeine and calories without the nutrients to heal the body.
