Broiled steak and garlic are a match made in heaven because the hearty meat flavor is accentuated by the savory tang of the garlic. Broiling steak is a simple way to prepare it, and marinating it first in olive or garlic oil will keep it from becoming dry and tough under the hot broiler. Choose a tender strip steak or a T-bone for best results, because these steaks have tender meat and a marbling of fat that can stand up to intense heat.
Step 1
Place the steaks in a large plastic bag and pour in 2 cups of olive oil or garlic oil. Add 8 cloves of minced garlic and seal the bag. Place the bag in the refrigerator for 4 hours or overnight.

Take the bag out of the refrigerator and allow the steaks to warm to room temperature on the counter. The warming time will allow the garlic flavor to penetrate the steak, as well as help the steak remain more juicy under the broiler. Warm meat stays more moist than meat that goes into the oven cold.

Preheat the broiler to 500 degrees Fahrenheit.

Take the steaks out of the oil and place them on the broiler pan. Strain the garlic pieces out of the oil and rub them onto the steaks.

Broil the steaks 2-1/2 minutes on each side for a rare steak, 3 minutes per side for medium rare, 4 minutes per side for medium, 5 minutes per side for medium well and 6 minutes per side for well-done steaks.
Step 6
Take the broiler pan out of the oven. If you want to be sure that your steaks are cooked to your liking, insert a meat thermometer into the center. Your steak should measure 120 degrees Fahrenheit on an instant-read meat thermometer for rare, 125 degrees for medium rare, 135 degrees for medium, 145 for medium well, and 150 for well done.
Step 7
Allow the steaks to rest for 10 minutes before you serve them. The resting period allows the steak to reabsorb the hot juices, making the meat more flavorful. This is particularly important when you broil steaks, because they will become dry if you cut them open too soon.
