How to Cook Eggs With Cilantro

If you're used to automatically reaching for the cereal box in the morning for the sake of convenience, give eggs a try one day --- you may be surprised at how quick and easy they are to prepare. One egg contains 70 calories and is packed with protein, vitamins and minerals, including, choline, lutein and antioxidants. Chop up some fresh cilantro and garlic to throw in your eggs and you'll have a healthy breakfast that will keep your stomach and brain happy until lunchtime.

Step 1

Rinse fresh cilantro under cool running water. Pat dry in cloth or paper towels and chop to a fine consistency using a sharp kitchen knife.

Step 2

Chop the onion, finely, and mince the garlic clove.

Step 3

Crack the eggs into a mixing bowl and whisk until the yolks are blended completely with the egg whites. Add the cilantro, onion, garlic and milk to the eggs and mix together well. Stir in the salt and pepper.

Step 4

Place the olive oil into a skillet and heat over medium to high heat on the stove.

Step 5

Pour the egg mixture into the skillet and stir the eggs with a wooden spoon. Continue to stir the eggs around the pan until they begin to set; fold the eggs every five to 10 seconds until they are completely set are no longer runny or liquefied.

Step 6

Transfer the eggs to a plate and serve immediately.

Tips and Warnings

  • Serve the eggs with fresh hash browns and fresh fruit.
  • Eggs contain a high amount of cholesterol; check with your doctor before consuming.

  • 6 large eggs
  • 1/4 cup fresh cilantro
  • 1/4 cup onion
  • 1 clove garlic
  • 2 tbsp. milk
  • 1/4 tsp. fresh ground pepper
  • 1/2 tsp. salt
  • 1 tbsp. olive oil
