How to Cook Naturally Nutritious Red Potatoes

Red potatoes are a good source of potassium, vitamin C and vitamin B6, as well as niacin and thiamine. Red potatoes also have almost no fat. The nutritional value of the potatoes and the low fat content make them a naturally nutritious side for a hearty pork roast or any main dish. You can roast, steam or boil red potatoes and they will retain most of their nutrients. Avoid adding more than the minimum amount of oil you need for roasting them to reduce the amount of fat that you add to the potatoes.

Roasted

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Trim any bad spots or sprouts off the red potatoes and cut them into quarters, if the potatoes are large, or halves if they are small. Place the red potatoes in the colander and rinse them under cool water to remove any dirt or sand.

Step 3

Brush the baking pan with 2 tbsp. olive oil. Arrange the red potatoes in a single layer on the baking pan. Sprinkle the potatoes with salt and pepper to taste.

Step 4

Roast the potatoes for 20 minutes or until you can insert a fork into the potato easily.

Step 5

Take the potatoes out of the oven and serve them immediately.

Steamed

Step 1

Trim any bad spots or sprouts off the red potatoes and cut them into quarters or halves. Place the red potatoes in the colander and rinse them under cool water.

Step 2

Bring 6 cups of water to a boil in a stockpot over high heat. Place the steamer basket over the stockpot and add the red potatoes. Cover the pot.

Step 3

Steam the potatoes for 10 to 15 minutes or until they are fork-tender.

Step 4

Remove the potatoes from the steamer basket and season them with salt and pepper to taste. Serve them immediately.

Boiled

Step 1

Trim any bad spots or sprouts off the red potatoes and cut them into quarters or halves. Place the red potatoes in the colander and rinse them under cool water.

Step 2

Bring 6 cups of water to a boil in a stockpot over high heat. Add the red potatoes.

Step 3

Boil the red potatoes for 15 to 20 minutes or until they are fork-tender.

Step 4

Drain the red potatoes into a colander. Season them wit salt and pepper and serve them immediately.
