Carbohydrate Counting in Greek Traditional Foods

Carbohydrate counting is one way to control blood sugar levels and to lose weight. Traditional Greek foods include fats, whole grains, lean meats and fresh vegetables. The number of carbs in a traditional Greek dish depend on its ingredients and the amount made. The American Diabetes Association recommends subtracting half the number of fiber grams from carb counts when the fiber count is 5 grams or higher.

Tzatziki

La Tartine Gourmande's website offers a basic tzatziki recipe with 1 cucumber, 2 cups Greek yogurt, 4 garlic cloves, 1tbsp chopped parsley, salt and pepper to taste, 2 to 3 tbsp extra virgin olive oil and juice of 1/2 lemon. Yield: more than 2 cups. According to the Foodily website, this recipe contains 31.1 gram of carbs and 1 gram of fiber for the whole dish. Tzatziki is often eaten with pita chips and hummus.

Hummus

Hummus, like tzatziki, is a Greek appetizer. The Pioneer Woman's recipe for eight servings of hummus is three 14.5 oz. cans garbanzo beans, 1/3 cup plus 1 tbsp tahini, 3 cloves garlic, juice of 1/2 lemon, 1/2 tsp ground cumin, salt, basil or Italian parsley to taste, 3 to 5 tbsp cold water and 1 tbsp olive oil. This recipe contains 118.6 grams of carbs and 27.4 grams of fiber for a total of 104.9 grams of carbs.

Dolmades

Dolmades is made from rice, fruits and vegetables rolled into a grape leaf. The Whole Living website's recipe for dolmades makes 36 servings and consists of 2 cups brown rice, 1/2 cup currants, 1 red bell pepper, 1 tbsp plus 1 tsp of olive oil, 1 medium yellow onion, 1 tsp oregano, 1 tsp coarse salt, 1/2 cup parsley, juice and zest of 2 lemons and 1 jar of grape leaves. Foodily states that this recipe contains 321.9 grams of carbs and 29.2 grams of fiber for a total of 307.3 grams of carbs.

Souvlaki

Souvlaki is a Greek main dish that can be made with different meats. Closet Cooking's souvlaki recipe opts for lamb and makes 3 to 4 servings. The ingredients are 1 lb of lamb, 2 cloves garlic, juice and zest of 1 lemon, 1/4 cup olive oil, 1 tsp oregano and 1/4 tsp each of salt and pepper. The whole recipe contains 6.9 grams of carbs and 1.2 grams of fiber.
