Cucumber Walnut Salad

A brisk and refreshing Greek-inspired salad is a delightful meal for lunch or a light dinner. When choosing a cucumber for your salad, look for a firm cucumber that has dark green, even skin, without bruises. Taste the skin of the cucumber -- peel it with a vegetable peeler if the skin is bitter. Walnuts, artichoke hearts and feta cheese make this dish satisfying, flavorful and low in fat. If you would like to further reduce the fat in the dish, use low-fat crumbled feta cheese and dress the salad lightly. To make the salad higher in protein, add cooked chicken breast cut into cubes.

Step 1

Layer the Romain lettuce on the bottom of a large salad bowl. Add the cabbage, carrots, artichokes and cucumber, and mix lightly.

Step 2

Sprinkle the top of the salad with the olives, tomatoes, feta cheese and walnuts.

Step 3

Make the salad dressing by whisking the vinegar, lemon juice, garlic salt, pepper, oregano and sage.

Step 4

Whisk in the Dijon mustard, then slowly add the olive oil, while continuing to whisk the mixture.

Step 5

Pour your homemade salad dressing over the salad, to taste. Serve in individual salad bowls.

  • 2 cups chopped Romain lettuce
  • 1/4 cup shredded carrots
  • 1/8 cup shredded purple cabbage
  • 1/3 cup quartered artichoke hearts
  • 1 cup diced cucumber
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup diced tomatoes
  • 1/2 cup whole walnuts
  • 1/2 cup feta cheese
  • Dressing:
  • 2 tbsp. white vinegar
  • 2 tbsp. fresh lemon juice
  • 1/2 tsp. garlic salt
  • 1/8 tsp. black pepper
  • 1/2 tsp. ground oregano
  • 1/2 tsp. ground sage
  • 1 tsp. Dijon Mustard
  • 1/4 cup olive oil
