Pasta salad is a meal common in several different types of cuisine that is typically served cold. It usually consists of one or more types of cooked pasta, an array of vegetables and sometimes meat. Adding a protein, like chunks of chicken, makes a pasta salad more filling. You can make a pasta salad with chicken chunks in approximately 1 hour and 10 minutes, including chill time. This recipe yields about eight servings.
Step 1
Heat the olive oil in the skillet over medium for three minutes, and then add the chicken breast cubes. Stir for about five minutes -- until the chicken's juices run clear. Sprinkle the garlic powder and ground black pepper into the skillet and remove it from the heat.
Step 2
Blend the chicken from the skillet, the cooked pasta, sliced carrots, green, red and yellow bell peppers and chopped broccoli in a large bowl. Toss to mix the ingredients of the salad equally.
Step 3
Stir the ranch salad dressing and Italian salad dressing together in a small bowl. Drizzle the dressing mixture over the top of the salad ingredients.
Step 4
Cover the bowl with a sheet of plastic wrap and refrigerate the pasta salad with chicken chunks for at least an hour before serving.
Tips and Warnings
- Consume the pasta salad with chicken chunks within four days. You can use your favorite salad dressing in lieu of the the ranch and Italian dressings. Additionally, your can also substitute your favorite vegetables for the broccoli, carrots and peppers.
