Mixed vegetables can be an addition to soups, stews and casseroles. They are also a side dish on their own. You can buy canned mixed vegetables, but you may not like everything in the mix. You can save money and time by pressure canning your own variety of mixed vegetables. By adding the foods you want, you'll have a custom-made mix of vegetables.
Step 1
Create your medley by adding any vegetables you want to a large bowl. The usual combination includes peas, onions, carrots, potatoes and celery.
Step 2
Stir your mixture well, distributing all vegetables evenly.
Step 3
Fill a jar with the vegetables using a funnel until the mixture is about 1 inch from the top of the jar.
Step 4
Pour water into the jar to about ½ inch from the top using the funnel. Wipe off any excess water on the outside of the jar using a paper towel.
Step 5
Place a sterilized canning lid on top of the jar. Screw a sterilized ring onto the jar tightly.
Step 6
Put the filled jars into the pressure canner with the lid side facing up.
Step 7
Fill the pressure canner with water to reach halfway up the jars and secure the lid in place.
Step 8
Bring the canner to the proper temperature as suggested on the pressure canner manufacturer's instructions. Cook the vegetables for 40 minutes under 10 pounds of pressure.
Step 9
Allow the pressure canner to cool completely before removing the lid. Remove the lid and lift the jars out of the canner using a jar lifter. Place the jars on a clean towel to cool.
Tips and Warnings
- Check the seal on each jar before moving to storage. Press down on the top of the lid to see if it springs back. If it doesn't, the lid is sealed. If it does, it is not sealed and the vegetables will need to be refrigerated for use within the next week.
- Never open the pressure canner's lid while it is still hot. Allow the outside of the canner to cool to the touch before attempting to remove the lid. Do not store vegetables that failed to seal, as this raises the risk of food poisoning.
