Ideally, fresh fish should not have an odor. However, some fish, such as mackerel, have a noticeable odor even when it is fresh. If you find this odor unappetizing, you can marinate the fish to cover the smell. When you marinate it, match the kind of fish with the appropriate marinade because some fish pair well with some marinades but not others. In addition, watch the time carefully or the fish can fall apart in the marinade or even be cooked by it, in the case of citrus juices.
Meaty Fish
Step 1
Mix together a marinade that has strong, bold flavors. For example, start with a base of 2 cups of olive oil or 2 cups of lime or orange juice and mix in 6 minced garlic cloves, 2 tsp. of ground ginger, 1 tsp. of crushed red pepper, 1 tsp. of wasabi or 2 tbsp. of soy sauce.
Step 2
Pour the marinade into a resealable plastic bag and add in four meaty fish fillets or steaks, such as swordfish, tuna or salmon. Seal the bag and place the fish in the refrigerator.
Step 3
Marinate the fish for one hour. One hour is sufficient to kill any odor and add flavor to the fish, but it won't cook the fish or make it soft.
Step 4
Take the fish out of the marinade and prepare it as your recipe directs.
Tender Fish
Step 1
Mix together a marinade with 2 cups of olive oil or 2 cups of white wine and add in 2 tbsp. of lemon juice, 4 cloves of garlic, 2 tsp. of thyme, 2 tsp. of tarragon, 2 tsp. of oregano, 1 bay leaf or 2 tsp. of basil.
Step 2
Pour the marinade into a resealable plastic bag and add in the four tender fish fillets, such as tilapia, red snapper or swai. Seal the bag and place the fish in the refrigerator.
Step 3
Marinate the fish for 30 minutes. Thirty minutes is sufficient to kill any odor and add flavor to the fish, but it won't cook the fish or make it soft. Do not hold the fish in the marinade past this time or the tender fillets may fall apart.
Step 4
Take the fish out of the marinade and prepare it as your recipe directs.
