How to Freeze a Pumpkin Log

If you find yourself with extra pumpkin logs, freeze these cream-filled cakes for a quick dessert or party treat. Freezing a cake can be a snap in a plastic bakery box, but most cakes can be frozen just as easily with plastic wrap. A resealable plastic bag provides a double wrap to keep the cold air out and moisture in. Defrost the log and dress it up for Thanksgiving or serve it to football fans during a game; it will taste as fresh as the day you stored it.

Step 1

Return the pumpkin log to the refrigerator after rolling with its filling inside. Leave it in the refrigerator for a few hours, or until the butter cream or cream cheese is hard and the log becomes firm enough to handle easily.

Step 2

Pull out a sheet of plastic wrap, and lay it flat on the counter. The sheet should be as long as the log plus about 8 inches to cover the ends.

Step 3

Center the log lengthwise on the plastic wrap, and sprinkle it with confectioner's sugar, using a flour sifter.

Step 4

Roll the log up in the plastic wrap just as you rolled the log itself after baking it. Fold the plastic wrap ends in to cover the ends of the cake.

Step 5

Put the plastic-wrapped log in the freezer, and leave it in the freezer overnight or until completely frozen.

Step 6

Remove the log from the freezer, and slip it into the plastic bag. Roll the bag to remove the air before zipping it shut.

Step 7

Put the log back in the freezer. Store logs for up to 4 months.

Tips and Warnings

  • Wrap your logs tightly in aluminum foil rather than plastic bags, sealing all edges by folding the foil over. Freeze frosted cakes for 2 hours before wrapping so that sticky frosting doesn't adhere to the plastic wrap. Wrap and bag once the frosting is frozen. Frosted logs should be used within 1 month. Unwrap frozen cakes and defrost them in the refrigerator to keep moisture evenly distributed. Bagging or sealing with aluminum foil helps prevent "freezer burn," which is dehydration caused by the freezing air.
  • Your freezer must maintain a constant 0 degrees Fahrenheit for food safety. Don't stack any food on top of your cake as it freezes, and ensure that it is lying flat to avoid uneven freezing.
