How to Roast Cauliflower With Balsamic Vinegar

Cauliflower is a healthy vegetable packed with essential nutrients and vitamins. The vegetable is an excellent source of vitamin C, omega 3 fatty acids and fiber. Instead of the traditional method of boiling cauliflower, it's possible to roast the vegetable, which gives it a crisp texture and a nutty flavor. Cauliflower can be roasted in olive oil; adding balsamic vinegar gives the vegetable a tangy and sweet taste.

Step 1

Preheat the oven to 400 degrees F. Mix the cauliflower with the olive oil and spices in a large bowl until the cauliflower has been evenly coated.

Step 2

Spread the cauliflower on a high-rimmed non-stick baking sheet in a single layer. Bake the cauliflower until the bottom begins to brown, approximately 15 to 20 minutes.

Step 3

Remove the cauliflower from the baking sheet and return to the bowl. Toss the cauliflower with the vinegar until it is well coated.

Step 4

Return the cauliflower to the baking sheet.

Step 5

Return the cauliflower to the oven and roast for an additional 5 to 10 minutes.

Tips and Warnings

  • For a variation, add ½ cup Parmesan cheese with the vinegar.

  • 8 cups cauliflower, cut into 1-inch-thick slices
  • 2 tbsp. extra-virgin olive oil
  • Large bowl
  • High-rimmed, non-stick baking sheet
  • 2 tbsp. balsamic vinegar
  • Pepper to taste
  • 1 tsp. paprika
  • 1 tsp. garlic powder
