Besides, the fat in avocados is mostly polyunsaturated and monounsaturated, which are heart-healthy and assist in promoting a balanced digestive system and metabolism. In addition, avocados contain vitamins A, C and K, folate, choline, potassium, magnesium and calcium. Moderation is key when eating avocados; therefore, keep your leftovers looking and tasting fresh so you don't feel compelled to eat the entire piece of fruit at once.
Step 1
Cut the avocado in half lengthwise. Separate the avocado into two halves and leave the pit in one half.

Use the half of the avocado that does not have the pit in it for your meal, snack or dish.

Squeeze fresh lemon juice onto the half of the avocado you are saving for later. The natural acid in the lemon juice helps the avocado flesh remain green.

Store the avocado in an airtight container or plastic storage bag. Keep the pit in the avocado while it is being stored.

Place the avocado half in the refrigerator, where it will remain good for about two days. Remove the pit when you are ready to eat the avocado.
