The large amount of fat that is in avocados may scare you away, but it shouldn't; these green fruits are packed with numerous essential vitamins and minerals. Besides, the fat in avocados is mostly polyunsaturated and monounsaturated, which are heart-healthy and assist in promoting a balanced digestive system and metabolism. In addition, avocados contain vitamins A, C and K, folate, choline, potassium, magnesium and calcium. Moderation is key when eating avocados; therefore, keep your leftovers looking and tasting fresh so you don't feel compelled to eat the entire piece of fruit at once.

Step 1

Cut the avocado in half lengthwise. Separate the avocado into two halves and leave the pit in one half.

Step 2

Use the half of the avocado that does not have the pit in it for your meal, snack or dish.

Step 3

Squeeze fresh lemon juice onto the half of the avocado you are saving for later. The natural acid in the lemon juice helps the avocado flesh remain green.

Step 4

Store the avocado in an airtight container or plastic storage bag. Keep the pit in the avocado while it is being stored.

Step 5

Place the avocado half in the refrigerator, where it will remain good for about two days. Remove the pit when you are ready to eat the avocado.

Tips and Warnings

  • Top freshly-made guacamole with salsa to prevent air from reaching the avocado in the mixture, which helps keep it green and fresh.
