How to Make a Wheat Banana Nut Cake for a Diabetic

If you or a family member is diabetic, it can be difficult to find enjoyable sweets and desserts. Make a banana nut cake that is tailored to the needs of diabetics, so the ingredients won't cause a sharp spike in blood sugar levels. The cake is moist, sweet and satisfying, with a pudding-like consistency and bits of crunchy pecans. The preparation uses whole wheat flour instead of white flour, making the banana nut cake more nutritious and giving it more fiber. Use ripe or slightly over-ripe bananas to give the cake more sweetness.

Step 1

Beat the egg yolks and bananas using a mixing bowl and hand mixer until blended.

Step 2

Add vanilla, milk, flour and honey and mix until smooth. Slowly add the pecans and mix.

Step 3

Gently fold the beaten egg whites into the mixture.

Step 4

Pour the cake batter into a well-greased baking dish. Place the dish inside a baking pan and pour about half of an inch of water into the outer pan.

Step 5

Bake the cake at 325 Fahrenheit for 30 minutes, until the top is puffy and lightly browned.
