Udon or low mein noodles with various toppings -- such as seafood and vegetables -- are a staple dish in Chinese cuisine. Chinese seafood noodles can be found at casual food markets as well as fine restaurants. Use halibut and shrimp for this preparation, or prepare the dish using other varieties of your favorite seafood -- such as clams, salmon, calamari or oysters. Add different kinds of vegetables such as carrots, bok choy and snow peas to give the seafood noodles a burst of Asian flavors. The dish is healthy for the heart and low in fat.
Step 1
Combine the cornstarch with the sake, and whisk until the mixture is smooth.
Step 2
Toss the pieces of halibut and the shrimp in the cornstarch-and-sake mixture to lightly coat them. Set this mixture aside.
Step 3
Combine the broth with the oyster sauce and white pepper. Whisk the mixture until it is smooth.
Step 4
Bring approximately 2 qt. of water to a boil. Boil the noodles until they are just done, but not mushy. Drain the noodles and set them aside; cover the noodles to keep them warm.
Step 5
Heat the oil in a wok -- or large skillet -- over medium-high heat.
Step 6
Add the seafood mixture, along with the bok choy, carrots and onions. Stir-fry the seafood and vegetables over high heat for three minutes.
Step 7
Add the broth mixture to the seafood and vegetables; bring the ingredients to a boil. Add the mushrooms, corn and snow peas. Cook the mixture for two minutes, stirring often.
Step 8
Spoon the seafood and vegetables over a large portion of Chinese noodles. Lightly toss the noodles and serve.

- 1/2 cup low-sodium chicken broth

- 8 oz. fresh lo mein or udon noodles
- 1 tbsp. vegetable oil
- 1/2 cup thinly sliced bok choy
- 1/2 cup thinly sliced carrots
- 1/4 cup thinly sliced green onions
- 1/2 cup sliced mushrooms
- 1/3 cup snow peas
- 1/3 cup canned baby corn
