How to Bake Cake Doughnuts

One 3 1/4-inch cake doughnut has 226 calories, and nearly 13 g of fat. Baking your cake donuts rather than deep-frying of them reduces this to 146 calories and only 2 g of fat. To get the familiar doughnut shape, use a doughnut pan, like a muffin pan with doughnut-shaped depressions. You can also use a mini muffin pan and make tiny doughnuts. Roll the doughnuts in cinnamon sugar or glaze them with a powdered-sugar glaze to make them even better. The instructions below show you how to bake the doughnuts using a basic recipe for 12 doughnuts. You'll notice the dough is softer than fried doughnuts, since it isn't necessary to roll and shape them.

Step 1

Preheat the oven to 350 degrees Fahrenheit.

Spray the baking pan with cooking spray.

Step 3

Combine the dry ingredients -- flour, sugar, baking powder, nutmeg, mace and salt -- in a large mixing bowl. Stir until they are well combined.

Step 4

Mix the milk, eggs and vanilla in a small mixing bowl.

Step 5

Pour the liquid ingredients into the dry ingredients. Add the melted butter. Beat the ingredients by hand until the dry ingredients are moistened. Don't beat until the mixture is perfectly smooth. A few lumps are all right.

Step 6

Divide the batter evenly between the depressions in the doughnut pan. Bake the doughnuts for 10 minutes. They are done when they spring back when touched. If necessary, bake them two to four minutes longer The tops should be golden brown.

Step 7

Cool the doughnuts for five minutes in the pan. Remove them from the pan and let them finish cooling on a rack or tea towel.

Tips and Warnings

  • Reduce the sugar to 1/2 cup if you plan to glaze the donuts or roll them in sugar after cooking them. For spicier donuts add 1 tsp. of cinnamon to the other spices. Substitute applesauce for half the melted butter and one of the eggs. Use about 1/3 to 1/2 cup of applesauce.
