When you make lower calorie cakes and cupcakes by substituting the oil and sugar in the batter, don't ruin your efforts by topping them with frosting filled with calorie-busting ingredients. Icing can also benefit from a change of ingredients. Sugar is frosting's main ingredients, but that can be reduced or replaced with sugar substitutes, allowing you to enjoy a sweet treat that's lower in calories.
Low Fat Low Calorie Chocolate Icing
Step 1
Place 3 tbsp. of nonfat milk and ½ cup butter into a saucepan and warm over low to medium heat on the stove. Using nonfat milk rather than whole milk will reduce the calorie and fat content of the icing. Stir frequently and continue to heat until the butter has melted.
Step 2
Add 1 tsp. cornstarch, 2 tbsp. nonfat dry milk powder and 1 ¼ cups sugar substitute of your preference. Replacing sugar with some form of sugar substitute is beneficial when trying to lose weight.
Step 3
Whisk the ingredients together until the icing begins to thicken. Keep a close eye on the mixture while on the stove to prevent it from boiling or burning.
Step 4
Remove the icing from heat and add ¼ tsp. vanilla extract and 1 tbsp. unsweetened cocoa powder. Whisk vigorously until all of the ingredients are blended together. Allow the icing to cool before using on cakes or cupcakes.
Milk Chocolate Frosting
Step 1
Bring a pot of water to a boil over high heat on the stove.
Step 2
Place a mixing bowl that can sustain heat over the top of the pot, so that the bottom of the bowl is coming in contact with the boiling water.
Step 3
Place 6 oz. milk chocolate pieces, no more than ¼ inch big, into the bowl and stir frequently as the chocolate melts.
Step 4
Remove the bowl from the heat once the chocolate is melted. Do this carefully, since it will be hot. Stir in ½ cup reduced fat sour cream. The reduced fat sour cream allows the frosting to be creamy without adding a lot of fat, sugar or calories.
Step 5
Allow the frosting to cool before using it on cakes or cupcakes.
