A good snack for a diabetic controls carbs and calories. Choosing high-fiber, nutrient-dense snacks helps you to feel full for a long period of time. Fiber is also good for controlling the rise in your blood sugar after you eat. Try these tasty low-carb snacks fit for a diabetic.
Low-Carb Parfait
As a diabetic, you may feel restricted as to what you can eat. Try this low-carb parfait adapted from DiabeticLivingOnline.com to calm your sweet tooth. Layer a cup with artificially sweetened yogurt, fresh berries and puffed wheat cereal. Layer each ingredient twice, then enjoy with a spoon.
Apple Wheels
This low-carb snack is fun and can also satisfy your sweet tooth. Start by coring four medium apples. Then combine 1/4 cup of creamy peanut butter, 1 1/2 tsp. of honey, 1/2 cup semisweet chocolate chips and 2 tbsp. raisins. Mix thoroughly then place the mixture into the middle of each apple. Place in the fridge for one hour. When the apples come out, slice each one into 1/4-inch rings, starting at the top. This recipe makes 24 servings. Do not overindulge.
Veggies and Dip
Non-starchy vegetables are a great snack for diabetics. Try making a plate of pepper strips and carrots. Dip these veggies in a guacamole dip of avocado, tomato, cilantro and lime juice. Or if this doesn't suit you, try dipping your veggies into hummus. You can easily make your own hummus by processing chickpeas, olive oil, garlic and lemon juice.
Tuna Salad
This low-carb diabetic snack packs a little extra punch of heartiness. This snack will sustain your blood glucose and energy enough to last you between lunch and dinner. Combine 2 oz. of light tuna with 1 tsp. light mayo and 1 tsp. of dijon mustard. Place the mixture on top of two rye crisp crackers and enjoy. As an alternative to crackers, you can wrap the tuna salad in two large romaine lettuce leaves.
