How to Melt Chocolate in a Pan

The preferred way to melt chocolate for your favorite recipes is to place it in a double boiler. As the water bubbles in the bottom pan, the chocolate melts above without burning. If you do not have a double boiler, melting chocolate in a pan is the next best thing. Doing so takes time, patience and a lot of attention to stirring. Rush the process and you may end up with melted chocolate stuck to a burnt pan.

Step 1

Remove the chocolate from its wrapper. Place unwrapped chocolate in the center of a heavy saucepan.

Step 2

Set the saucepan on the stove top. Turn the burner on the stove top to the lowest heat setting.

Step 3

Stir the chocolate constantly with a wooden spoon. Remove the saucepan from the heat when melting begins and only small lumps of chocolate remain. Continue stirring the chocolate until smooth.

Tips and Warnings

  • Chopping or shaving the chocolate before adding it to the pan reduces melting time.
  • Never melt chocolate over high heat. The higher the heat, the more likely the chocolate is to burn. Do not stop stirring the chocolate during melting. Constant stirring prevents the chocolate from sticking to the bottom of the saucepan and burning.
