How to Bake Apples in a Microwave for a Diabetic

Following a diabetes diagnosis, you might think that desserts are off limits. However, you can still eat something sweet when you get a craving, but you need to make smart choices to keep your blood sugar in check. Prepare baked apples in the microwave for a quick, satisfying dessert. If you are using the diabetes exchange list for your eating plan, a microwaved baked apple counts as one fruit exchange. It also contains about 80 calories, 22 g carbohydrates, 3.7 g fiber and 20 mg sodium.

Step 1

Use a fork to poke holes all over the outside of the apples. Place the apples in a microwave-safe baking dish, ensuring that the dish is not overcrowded and the apples are not touching each other.

Step 2

Spoon half the cinnamon, nutmeg and allspice into each of the apples. Do not be concerned if some of the spice ends up on the outer surface of the apple.

Step 3

Spoon 1 tbsp. of the water into each of the apples. Cover the apples loosely with wax paper or plastic wrap.

Step 4

Microwave on "high" heat setting for around 6 minutes, or until the apples are soft when you test them with a fork.

Step 5

Place the apples onto a serving dish. Spoon the cooking liquid that collected on the bottom of the cooking dish over the top of the apples. Serve warm.

Tips and Warnings

  • You can add 2 tsp., or 1 packet, of sugar substitute to the center of the apple with the spices, if desired.
