A multi-layer cake looks nice and stands straight when you take the time to level each layer to make it flat. Complete this step before frosting the cake, so you can stack the layers without problems and create a professional look to your cake. Placing the cake in the freezer for a short time stiffens the cake to make it easier for you to flatten the top. This step also reduces the risk of the cake crumbling or tearing while you cut.
Step 1
Prepare the cake pans by rubbing the inside bottom and sides with a thin layer of shortening. Sprinkle about 1 tbsp. flour into each cake pan. Shake the pan so a layer of flour sticks to the shortening on the bottom and sides. Dump out excess flour and discard.
Step 2
Pour the cake batter into the pan, filling it about two-thirds full. Lightly tap the pan on the counter to smooth the batter and eliminate air pockets. Bake the cake according the recipe instructions, letting the cake cool 10 minutes before taking it out of the pan.
Step 3
Slide a knife between the edge of the cake and pan, to loosen the cake and prevent tearing. Place the cooling rack on top of the cake pan, and then flip the pan and rack over so the rack rests on the counter. Lightly shake the pan so the cake falls out onto the rack. Flip the cake over so the top of the cake is facing up.
Step 4
Let the cake cool for a minimum of one hour. Place the cake onto a platter and place it in the freezer for 30 minutes, after it is cool.
Step 5
Remove the cake from the freezer and move it to the decorating board, if needed. Use a long, serrated knife to slice off the top "dome" shape of the cake. The amount you need to remove varies and depends on the amount of rise during baking. Repeat the cutting process with each cake layer, while they are still slightly frozen.
Step 6
Layer the flat cakes by placing frosting between each layer, if desired.
Tips and Warnings
- You can use a wire cake cutter, instead of a serrated knife, to measure and cut off the "dome" top of the cake.
