Grilling a sirloin steak with a cast-iron grill pan will quickly sear the meat to hold in the natural juices. Sirloin is a tender cut of beef that comes from the center-rear of the animal, so you do not have to marinate or pound the meat for tenderizing. Keep the grill pan at a hot temperature while grilling to cook the meat evenly until it reaches a safe temperature for consumption.
Step 1
Set the sirloin steaks on a counter while preparing the grill pan to reduce some of the chill before placing them on the hot grill; this will help the steaks cook quickly.
Step 2
Place a 12-inch cast-iron grill pan or skillet in the oven, and then turn it to 500 F. Leave the pan in the oven while the oven preheats.
Step 3
Pour the salt, barbecue seasoning and black pepper into a small bowl, and combine it with your fingers. Rub the sirloin steaks with the seasoning, using your fingers to press it into the meat.
Step 4
Remove the pan from the oven, and place it on a stove burner set to medium-high. Place the steaks into the pan immediately, and cook the steak for two minutes. Flip the steaks and cook them for another two minutes for a rare doneness. Cook the steaks for three minutes on each side to get a medium steak or four minutes on each side to get a well-done steak.
Step 5
Check the internal temperature by sticking a meat thermometer in the thickest part of the sirloin steak. A safe temperature is 145 F for rare, 155 F for medium or 165 degrees F for well-done.
Step 6
Remove the steaks from the grill pan and place them on a serving platter or baking sheet. Cover the sirloin steaks with a piece of aluminum foil and let them sit for five minutes.

- Read the ingredient label on the barbecue seasoning, and omit the salt and black pepper if they are ingredients.
