The smell of a roast cooking is a warm welcome to practically anyone. Roasts have been a staple on the American table for generations. After less than tender results, however, some people shy away from cooking them. Don't be afraid to cook a roast. You can prepare a tender roast as long as you use the proper methods. The easiest way to insure tender results is to use a moist heat method of cooking. This recipe will produce a tender roast every time.

Preheat oven to 300 degrees Fahrenheit.

Season the roast with salt, pepper and Italian seasoning.

Preheat Dutch oven on top of stove on medium-high.

Add oil and swirl to cover the bottom of the pan.

Brown the roast on both sides.

Lift the roast and place the onion and garlic underneath it.

Turn off the heat and add the beef broth and tomato sauce.

Cover tightly and place in the preheated oven.

Bake until tender, approximately 3 ½ to 4 hours. Add additional beef broth or water if necessary during cooking, do not allow it to cook dry. The moisture is key to producing a tender roast.
