Although the tomato is actually classified as a fruit, it is the fourth most popular vegetable, according to the U.S. Department of Agriculture. Beaten only by potatoes, lettuce and onions, the tomato is a versatile food that can be eaten raw, cooked, stewed or juiced. The
low-calorie, low-sugar vegetable is packed with vitamins and is a perfect addition to a healthy diet.

Calories, Carbs and Fat

There are 40 calories in two 1/2-inch slices of a large tomato, or about 2 z., making it a common side item for individuals watching their weight. Two slices of tomato contain approximately 2 carbohydrates and trace amounts of fat. The tomato is considered to be low on the glycemic index, so the carbohydrates do not cause a spike in blood sugar.

Vitamins

Nutrient-rich tomatoes supply many different vitamins that are essential to a healthy diet. Two slices of tomato contain vitamin C, vitamin A and beta-carotene. Vitamin C helps form collagen, which supports healthy skin and ligaments. Vitamin A supports bones and teeth, and beta-carotene fights cell damage. Tomatoes also have thiamin, niacin, folate and vitamin E.

Minerals

Tomatoes are an important source of the mineral potassium, which is needed for muscle and heart function. Potassium can also lower blood pressure levels and reduce the risk for heart disease. Tomato slices also have between 5 and 10 percent of the daily recommended amounts of the minerals zinc, iron, calcium and magnesium.

Lycopene

Lycopene is an important antioxidant found in tomato slices. Researchers believe that consuming foods that contain lycopene can help prevent certain cancers, reduce cholesterol and the risk for heart disease and assist in healthy eye function. There are 695 mcg in each slice of tomato. Organic tomatoes have more lycopene than conventional tomatoes, making them a better choice for individuals looking to increase the amount of lycopene in their diet.
