Buy an avocado that springs back to the touch and is still slightly firm, with no dark spots. Keep it in a paper bag at room temperature until it is time to cut. After it has been opened, sprinkle lemon juice on the cut side to maintain the green color, wrap it in plastic wrap and keep it in the refrigerator.

To maintain freshness, it is important to cut into this fruit correctly, especially if you plan to eat the rest later. Cut the avocado in half, slicing around the seed. Pop out the seed with a spoon and then either peel the fruit or scoop out the flesh with a spoon.
