Bananas are mild enough for even picky eaters to enjoy, and your local grocery store will likely keep them stocked at affordable prices year-round. This fruit is also high in potassium, fiber and vitamin B-6. Eat a banana snack in the afternoon when your energy is fading or snack on baked bananas after dinner. Cooking the fruit will make it even sweeter, so you won’t need to add any sugar to make it a satisfying dessert for adults or children.

Banana Chips

Step 1

Slice bananas into slices 1/8 inch thick. Dip each slice in fresh lemon juice. Place the slices on a baking sheet that has been sprayed with cooking spray.

Step 2

Bake the bananas for 2 hours in a 200-degree Fahrenheit oven. Take the tray out of the oven and use a spatula to flip the slices over. Return the trays to the oven and bake them for another 1 to 2 hours, or until the slices are crisp. Take them out and let them cool on the baking sheets.

Step 3

Mix together whole or sliced almonds, raisins, peanuts, miniature pretzel sticks, shredded coconut and rice cereal. Mix in the cooled banana slices.

Step 4

Store the extra trail mix in an airtight container. It will stay fresh for up to two weeks.

Roasted Honey Bananas

Step 1

Slice bananas in half lengthwise. Place the bananas in a glass baking dish that has been sprayed with cooking oil.

Step 2

Melt a tablespoon of butter. Use a pastry brush to cover each side of each banana with butter. Use the brush to coat one side of each banana with honey. Drizzle lemon juice over the bananas.

Step 3

Bake the dish in a 350-degree oven for 10 minutes or until the bananas are soft. Let the dish cool for a few minutes.

Step 4

Sprinkle the bananas with chopped pecans and eat them with a spoon or slice them up and use them to top a spoonful of frozen yogurt. Eat the bananas right away, because they taste best warm.

Tips and Warnings

  • Choose firm bananas, since soft fruit may fall apart when it's cooked. The banana peels should have no green on them and no more than a few brown spots. You can eat a handful of banana chips on their own rather than adding them to trail mix if you prefer.
