Green bean casserole is a traditional part of many family dinners, Sunday lunches and holiday celebrations. While being on a low-carbohydrate diet can sometimes dampen your enthusiasm at the dinner table, this side dish is one that you don't have to give up. The major ingredients -- green beans, cheese, onions and heavy cream -- are all low in carbs, so you can enjoy your dinner and your company.
Variation 1
Step 1
Put the butter in a saute pan and melt it over medium-high heat.
Step 2
Add the onions, celery and mushrooms and saute until tender. Remove the pan from the heat and set aside.
Step 3
Combine the sour cream and heavy whipping cream, then add the sauteed vegetables, green beans and spices. Mix well.
Step 4
Pour the mixture in a baking dish and lay the cheese cubes evenly over the surface.
Step 5
Cover the dish with aluminum foil and bake for 30 minutes at 350 degrees. Remove the foil and brown before serving.
Variation 2
Step 1
Put the butter in a saute pan and melt it over medium-high heat. Add the onions and saute until tender.
Step 2
Combine the onions, soup, milk and green beans. Mix well and season with pepper to taste.
Step 3
Spread the mixture in a baking dish and lay the cheese cubes evenly over the surface.
Step 4
Bake for 30 minutes at 350 degrees, then sprinkle the sliced almonds on top. Bake until the almonds are golden brown.
