If you are trying to include more whole grains in your diet, barley is a hearty option. This versatile grain can be ground into flour or fermented to make beer. Barley malt, a thick sweetener similar in taste and texture to molasses, is a more healthful alternative to white sugar with a lower glycemic index. One way to include more barley in your diet is to pan-fry it and serve it as a side dish or topped with vegetables.

Step 1

Rinse 1 cup barley, and soak it in a bowl of water overnight.

Step 2

Boil 3 cups water and add the soaked barley. Simmer it for 15 minutes or until all the water is absorbed.

Step 3

Melt 2 tbsp. butter in a frying pan. If you are using onion, chop as much as you like and saute it in the butter until tender.

Step 4

Add the barley to the pan. Fry it for 8 minutes, stirring frequently.

Step 5

Season with salt and pepper to your taste.

Things You'll Need

  • 1 cup barley
  • Saucepan
  • 2 tbsp. butter
  • Frying pan
  • Chopped onion, optional
  • Salt and pepper, optional
