Carbs are either simple or complex. Complex carbs are the healthier of the two, and that’s what strawberries are.
Vitamin C
Although only 2 percent of daily recommended vitamin C needs is in a serving of dehydrated strawberries, a few servings can still help improve your health. Vitamin C is important for the structural tissues of the body, as well as the well being of your mind. Vitamin C is used to produce collagen, which is used to create ligaments, tendons, bones and blood vessels. It is also used to create neurotransmitters, which allow your brain to function properly. Vitamin C has also been shown to increase your mood by creating such neurotransmitters.
Iron
A single 1/3 cup serving of dehydrated whole strawberries has 10 percent of the total recommended amount of iron that should be eaten daily. Iron is extremely important to your body because it is needed to create red blood cells, and after those cells are created with the iron inside, the iron is what is used to transport oxygen throughout the bloodstream. Iron is also used by the mitochondria inside cells to convert sugar to ATP, the body’s energy storage compound.
