Despite being very lean, pork tenderloin is exceptionally tender, making it an ideal option for a healthy dinner. Make an effortless yet mouthwatering meal by preparing the tenderloin in the morning and letting your Crock-Pot take care of the rest. Italian salad dressing infuses the pork with the flavors of garlic, herbs and other spices. Store-bought dressing works just fine, but a simple homemade dressing probably contains less sodium and sugar than bottled versions.
Heat a tablespoon of oil in a large skillet over medium-high heat. Sear the tenderloin in the skillet until it is browned on all sides, about two to three minutes per side.
Transfer the tenderloin to the slow-cooker and pour the salad dressing over the top of the pork. Use about 1/2 cup of salad dressing for every pound of meat.
Add aromatics and chopped vegetables to the slow-cooker, if you wish. Choose from garlic, bay leaves, dried herbs, onions, carrots and celery.
Cover the slow-cooker and cook on high for four to five hours or low for six to seven hours. Cut the finished pork into slices to serve.
