Healthy Way to Marinate Chicken Legs

Marinating chicken legs does more than just infuse them with flavor; it also helps make them more tender. The fibers in meat and the webs of collagen holding the fibers together are what make chicken tough. Soaking chicken legs in a combination of ingredients breaks down the fibers and collagen as it flavors the meat. Marinate chicken legs in a homemade concoction and the amount of sugar, salt and fat being added can be controlled.

Step 1

Fill a bowl with enough pineapple juice to cover the chicken legs. Pineapple juice contains an enzyme called bromelain that breaks down proteins. Citrus juice, wine and vinegar also will break down proteins and add flavor.

Step 2

Add about 1/4 as much olive oil as there is pineapple juice. The measurement does not have to be exact. Canola oil will work, too, but olive oil contains omega-3 fatty acids, which are heart healthy and offer extra flavor.

Step 3

Sprinkle in the seasonings of choice, to taste. Cilantro, ginger and cayenne pepper complement each other and the pineapple juice. Whisk the pineapple juice, oil and spices together.

Step 4

Salt and pepper all sides of the chicken legs. Loosen the skin on the chicken legs by sliding your fingers gently beneath them, but do not remove the skin. Cooking chicken legs with the skin on helps keep them moist.

Step 5

Place the seasoned chicken legs into a large plastic zipper bag and pour in the marinade. Squeeze out as much of the air as possible, and zip the bag closed. Let the chicken marinate in a refrigerator for two to four hours.

Tips and Warnings

  • Add soy sauce to a pineapple marinade for a deeper flavor.
  • Never marinate chicken legs on the counter to avoid the risk of bacteria developing.
