How to Grill & Skewer Vegetables With Orange Marinade

Grilling fresh vegetables is a healthy way to bring out their color, texture and flavor without adding a lot of unhealthy fat. It is best to choose vegetables of about the same texture so that they all cook at the same rate. Orange vegetable marinade adds a fresh tang and a bit of vitamin C to the mix. Even better: orange-grilled vegetable skewers are delicious as well as nutritious, and appealing to most kids.

Step 1

Wash your vegetables and cut them into large chunks. Keep the pieces uniform so that they will all cook in the same amount of time.

Step 2

Separate the vegetable chunks into plastic zipper bags so that they don’t flavor each other while they are marinating.

Step 3

Pour some orange juice into a bowl. You will need enough to cover all of the cut-up vegetables.

Step 4

Add approximately 1 part olive oil for every 4 parts orange juice -- the amounts don’t have to be exact. Add ground ginger, cinnamon, garlic salt and white pepper to taste, and whisk everything together.

Step 5

Pour enough marinade into each zipper bag to cover the vegetables inside of it.

Step 6

Squeeze out as much of the air as you can and zip the plastic bags closed.

Step 7

Place the vegetables in the refrigerator and allow them to marinate for 1 hour. Don’t let them sit for longer than that or they can get mushy.

Step 8

Pour the vegetables into a mesh strainer over the sink and drain the marinade.

Step 9

Spray your grill rack with a light coating of nonstick spray or wipe it down with paper towels dipped in oil. Preheat the grill to medium-high.

Step 10

Thread the vegetable chunks onto skewers.

Step 11

Grill the vegetables for 8 to 12 minutes, turning them once. They are done when they are hot throughout, but still slightly crisp.

Tips and Warnings

  • Soak your wooden skewers in water for an hour prior to grilling so that they are less likely to char.
  • Never leave skewers where young children can reach them.
