Fried turkey legs are a staple of carnivals and state fairs around the United States. If you enjoy the flavor of fresh, fried turkey, you don't have to wait for the carnival to come to town. You can enjoy a crispy fried turkey leg at home. Even better, frying smaller pieces of turkey is safer than frying a whole turkey, which makes them a good substitute for a whole bird at the next holiday meal.

Step 1

Pour 6 cups of vegetable oil into a deep skillet. Heat the oil over high heat until it reaches 360 degrees Fahrenheit, as measured by a fryer thermometer.

Step 2

Season the turkey legs with 4 tablespoons of the seasoning of your choice, such as Cajun seasoning or barbecue rub.

Step 3

Lower the turkey legs into the hot oil. Place them into the oil slowly to avoid splashing hot oil onto the burner.

Step 4

Fry the turkey legs for 10 to 15 minutes, or until they are golden brown on the outside.

Step 5

Remove one turkey leg from the skillet and insert an instant thermometer into the meatiest part of the turkey leg. Be careful not to touch bone with the thermometer or it will affect the reading. The turkey leg will register 180 degrees Fahrenheit when the meat is cooked through.

Step 6

Remove the turkey legs from the hot oil with tongs and place them on a plate covered with paper towels to drain.

Step 7

Serve the turkey legs hot.
