Good Way to Cook Chicken Breast Cutlets

Chicken breast cutlets are thin cuts of chicken breast that cook quickly. Buying this cut of chicken at a local market usually means the cutlet has been sliced from a thicker, tougher cut of breast meat. To get the most tender chicken cutlet possible, buy a freshly split chicken breast and slice the meat to the desired thickness. It is possible to cook a tender chicken breast cutlet if the meat is treated properly. Grilling the chicken cutlet on an inside grill pan is a good way to cook chicken breast cutlets to achieve a tender, juicy finished dish.

Step 1

Coat the grill grate with nonstick cooking spray to prevent the meat from sticking.

Step 2

Preheat the grill by starting the charcoal or lighting the gas burner. Allow the grill to come to high heat.

Step 3

Place the chicken cutlets in a plastic storage bag. Pour in the lemon juice, dill, pepper and garlic clove. Squeeze the excess air out of the bag and seal the top.

Step 4

Allow the chicken cutlets to sit at room temperature for 30 minutes, both to marinate and to allow for even cooking.

Step 5

Place the chicken breasts directly on the grill grate. Leave the grill lid open.

Step 6

Cook the chicken for 13 minutes on one side and flip it. Cook the meat for another 13 minutes.

Step 7

Insert a meat thermometer into the thickest part of the chicken breast to ensure the internal temperature has reached 160 Fahrenheit. Remove the meat from the grill as soon as this temperature has been reached.

Tips and Warnings

  • Other seasonings that work well with chicken cutlets include soy sauce, ginger and onion powder. Cook the cutlets with Italian seasoning, Top with fat-free mozzerella cheese for a healthy take on chicken parmesan.
  • Wash your hands after any possible contact with raw meat. and keep work surfaces clean and sanitary during and after preparation.

  • Juice of 1 lemon
  • ¼ cup fresh chopped dill
