Organic beef comes from cows that primarily feed on grass, making it lower in fat than beef from grain-fed cows. The steak cooks quickly and at relatively low temperatures. Cooking organic sirloin requires careful attention to prevent the meat from being overdone or dry. Cooking results depend on timing and preparation.

Step 1

Season your steak by immersing it in marinade and placing it in a refrigerator, turning frequently to ensure even coverage. There are a variety of marinade recipes, many based on oil or wine. Marinades for organic sirloin should be light to not overwhelm the delicate flavor of the meat. If you decide not to marinate the steak, you can season it by rubbing both sides with pepper before cooking.

Step 2

Tenderize the meat. This separates the connective tissues, making the steak less tough. You can use a meat tenderizer or pound the steak gently but firmly with your fists or a rolling pin.

Step 3

Heat a frying pan. For sirloin steak, you would normally heat the pan until it was as hot as possible. Organic beef tends to cook more quickly than other beef, so your pan should be slightly below the maximum temperature.

Step 4

Place the steak in the pan, pressing it down firmly. Turn the meat to ensure even cooking on both sides.

Step 5

Watch the steak carefully. Cooking time varies, depending on the thickness of the meat and how well you want it cooked. For rare meat, a 1-inch organic sirloin steak will cook in as little as 90 seconds a side. A well-done organic sirloin can take about three minutes per side.

Step 6

Remove the steak from the heat as soon as both sides are done, allow it to cool for a few minutes and serve.
