How to Cook a Sirloin Steak in a Broiler

When the weather just isn’t right for grilling, try broiling. Both grilling and broiling provide direct heat during cooking and give meats a charred look and flavor. For some ovens, the broiler rests in an individual compartment under the stove. For others, the broiler resides directly inside the oven itself. A heating element provides the intense heat required to get the job done. Just about any type of tender meat cooks up quick and juicy in the broiler — even sirloin steak.

Step 1

Wash the sirloin steak under a stream of cool water. Pat each side of the sirloin dry with paper towels and lay it on a plate.

Step 2

Rub olive oil on both sides of the sirloin. Sprinkle salt, pepper and other seasonings to taste.

Step 3

Turn on the broiler and set the broiler rack 5 to 6 inches below the heating element. If you are using an electric stove, set one of the oven racks 5 to 6 inches below the heating element.

Step 4

Place the sirloin on a broiling pan. Slide the pan into the oven or broiler. Close the oven or broiler door.

Step 5

Flip the steak with a pair of tongs once the top develops the desired brownness. Broil the other side of the sirloin steak.

Step 6

Continue cooking until the steak reaches the desired doneness. A well-done, 1-inch sirloin steak can take anywhere from 10 to 14 minutes to brown on just one side. An additional 10 to 14 minutes is often required for the second side as well.

Step 7

Slip on an oven mitt. Open the oven or broiler door and remove the steak from the broiler with the tongs and set it on a serving plate.

Tips and Warnings

  • Broil your sirloin to perfection with little guesswork using a meat thermometer. Insert the thermometer into the center of the meat to determine the temperature. A reading between 120 and 125 degrees Fahrenheit yields a rare steak; 130 to 140 degrees Fahrenheit makes for medium rare. Once the temperature reaches 140 to 150 degrees Fahrenheit, you can bet on medium sirloin. A medium-well sirloin has a center temperature of 150 to 160 degrees Fahrenheit and well done measures 160 to 170 degrees Fahrenheit. Line the broiling pan with aluminum foil to simplify cleanup. A marinade drizzled over the steak during broiling can intensify the flavor of your sirloin.
  • Do not flip the sirloin more than once. One turn is enough to achieve browning on both sides. Continuous flipping results in longer cooking time. Check the sirloin steak regularly during broiling.
