Whether you catch a fresh fish while camping or bring fillets from home, the campfire adds a flavorful sear to the meal. Grilling is a healthy method for cooking fish to keep the fat content low. A grill grate hanging over the campfire or a grilling basket makes the cooking process easier. Another option is a foil packet to hold the fish near the heat of the campfire. Vegetables also work over the campfire to round out this camping meal option.
Grill Grate Method
Step 1
Place the grill grate over the campfire, using a tripod to hold it in place. Allow the grill grate to heat up by leaving it over the fire so the metal grate gets hot.
Step 2
Brush a thin coat of oil on the fish. Season the fish fillets with dry seasonings such as salt, pepper and garlic.
Step 3
Place the fish fillets directly on the grill grate or place them inside a grilling basket. Use a sturdy piece of fish like salmon with the skin still on the fillet for best results. The skin helps hold the fish together as it cooks.
Step 4
Slide a spatula under the fish after cooking for two to three minutes. If it releases easily, flip the fish over to cook on the other side. Cook the fish for two to three minutes more.
Step 5
Remove the fish from the grill grate when it flakes and looks opaque in the middle. Continue cooking until the fish reaches this point.
Foil Method
Step 1
Brush oil on both sides of the fish fillet. Season it with dry seasonings as you would for grill grate preparation.
Step 2
Place each fish fillet in its own square of foil. Squeeze lemon juice over the fish. Seal the foil around the fish so it is completely enclosed.
Step 3
Lay the fish pouch on an area of hot coals around the edge of the campfire. Cook the fish in the coals for 10 minutes.
Step 4
Open the pouch, using caution to avoid burning yourself on the foil or the steam inside. Serve the fish if it is flaky and opaque. Reseal the pouch and cook the fish longer if it isn't done cooking.
