Apples and cranberries are both in season during autumn. Used in combination, these fruits complement each other; they are often used together in desserts and side dishes. Apples and cranberries are both low in calories and high in nutrients and antioxidants, making them super fruits from a nutritional point of view. Cranberries are native to North America and were introduced to the colonists by native Americans. Valued for their high vitamin C content, sailors took cranberries stored in barrels of water with them on voyages, according to Stephanie Jaworski. Combined with the "apple a day" fruit, cranberry recipes are nutritional powerhouses.
Step 1
Preheat oven to 350 degrees Fahrenheit. Peel and core apple. Cut into chunks. Pour cranberries into a colander and rinse under cool, running water.
Step 2
Place apple chunks and cranberries in a mixing bowl.
Step 3
Measure orange juice, maple syrup, cinnamon and nutmeg. Add each ingredient to apples and cranberries in bowl. Mix together.
Step 4
Rub inside of a baking dish with olive oil to lightly coat.
Step 5
Pour the mixture into the prepared baking dish. Place in preheated oven. Bake for 40 minutes.
Tips and Warnings
- Sweeten with maple syrup or brown sugar. Add spices, such as cinnamon and nutmeg. Orange juice and orange zest provide flavors that blend well with an apple-cranberry combination.
