How to Cook Mango-Marinated Mahi Mahi

Also known as dorado or dolphin fish, mahi mahi has a firm, meaty texture. Because this fish is moderately high in fat, you can grill it or bake it without worrying that it will become too dry. The mango marinade adds some moisture and a slight sweetness. Top the fish with a mango salsa to bring out the flavor of the dish.

Marinade

To make a simple mango marinade, combine 1/2 cup of mango nectar or pureed mango, 1/4 cup of orange juice, 1/4 cup of lime juice, 2 tablespoons of balsamic vinegar and 2 teaspoons of sea salt. For extra flavor, toss in one small sliced onion, two cloves of minced garlic and a sliced yellow or red bell pepper. Marinate your mahi mahi for at least two hours in the refrigerator.

Baking

Preheat your oven to 400 degrees Fahrenheit. Remove your mahi mahi from the marinade and place it in a greased baking dish. Bake the fish for approximately 25 minutes. The fish is done when the flesh turns white and flakes easily with a fork.

Grilling

Heat your grill to medium-high. Oil the grill rack to prevent the fish from sticking. Remove the mahi mahi from the marinade and place in on the grill rack, with the skin side facing up. After approximately eight minutes, turn the fish. You might need to add more oil to the grill rack at this point. Grill the fish for approximately eight more minutes, depending on the thickness of the fish. When the flesh is white and flaky, the mahi mahi is done.

Mango Salsa

Top your baked or grilled mango-marinated mahi mahi with a chunky mango salsa. Peel and chop one large mango. Add 1/2 cup of diced red onion, 1/4 cup of chopped fresh cilantro and one diced red bell pepper. Add the juice from two fresh limes and stir to combine. If you enjoy spicy foods, mix in one finely chopped jalapeno. Season the salsa with a bit of salt, as desired.
