How to Freeze Cheesy Potatoes

The flavors of cheese and potatoes complement each other well, creating a pleasant blend of creamy richness. You can make cheesy potato recipes, including casseroles and stuffed potatoes, ahead of time and freeze them. You must protect cheesy potatoes from air exposure before you freeze them so their texture does not deteriorate. Properly reheated cheesy potatoes are difficult to tell from their fresh counterparts.

Preparing the Cheesy Potatoes for Freezing

Cook the cheesy potatoes as specified by the recipe. Potatoes turn grainy and lose flavor when you freeze them raw. If you plan to freeze the cheesy potatoes in the same dish you cooked them in, select an aluminum pan that can withstand temperature changes. Glass pans might shatter in the oven. After the cheesy potatoes have cooked, immediately cover and place them in the refrigerator for two to three hours. This makes them easier to package and helps the cheesy potatoes freeze faster. Once the potatoes have cooled in the refrigerator, divide them into individual portions if you do not plan to reheat the entire dish at once.

Packaging the Cheesy Potatoes

Wrap individual portions of cheesy potatoes in aluminum foil to protect them from air exposure. Cut a sheet of aluminum foil approximately three times the size of the serving and place the cheesy potatoes in the center. Wrap the edges around the cheesy potatoes and pinch the foil sealed. If you are packaging the potatoes in their original baking container, cover it tightly with aluminum foil, crimping it around the edges. Place the foil-wrapped individual portions of cheesy potatoes in 1-gallon plastic freezer bags and seal them tightly. If you are freezing them in a baking container, encase it in a layer of plastic wrap on top of the aluminum foil. The plastic gives the potatoes an added level of protection against air, helping to retain flavor and texture.

Freezing the Cheesy Potatoes

Place bags of individually wrapped cheesy potatoes servings in the freezer, lying flat. This prevents the servings from smashing against each other and deforming their shape before they freeze. Once the servings have frozen, in about two hours, you can position them in the freezer any way you would like. If you are storing the potatoes in their original baking dish, place it in the freezer, lying flat, in a position where you will not set anything on top of it. This prevents the foil and plastic wrap from breaking, which would expose the cheesy potatoes to air and cause severe freezer burn. Cheesy potatoes retain their best quality for two to three months but are safe to freeze indefinitely.

Reheating the Cheesy Potatoes

Preheat the oven to the temperature at which you cooked the cheesy potatoes, or 350 degrees Fahrenheit. Once the oven has preheated, remove the cheesy potatoes from their freezer bag or plastic wrap and place them directly in the oven, encased in their aluminum foil. Allow them to bake for 150 percent of the time originally required to cook the recipe. Test their internal temperature with a food thermometer; the cheesy potatoes should reach 200 degrees Fahrenheit. If they are a lower temperature, continue reheating them in the oven for 10-minute increments. If you would like, you can microwave the potatoes, but they might not retain their texture as well. To microwave them, remove the foil wrapping and place them on a microwave-safe plate. Microwave them on high for increments of three minutes until they have heated to at least 200 degrees Fahrenheit. This is not safe with an aluminum baking pan.
