1. The Hows and Whys of a Raw Foods Diet
Raw foods, such as fresh fruits, vegetables, grains and nuts, are high in vitamins, minerals, antioxidants and other nutrients. These foods contain healthful enzymes that may aid in digestion. Many people follow raw food diets for a week, a month or even longer for cleansing or detoxification, and some people commit to a raw food diet for life. Raw foodists often enjoy increased energy, better digestion, clearer skin and weight loss. The exact parameters of a raw diet vary by the individual, but to be considered "raw" a food generally must not be heated above 120 degrees Fahrenheit. A raw diet consists of at least 75 percent raw foods.
2. All About Nuts
Pecans, walnuts, peanuts, Brazil nuts, hazelnuts and other nuts and seeds are awesome sources of powerful, concentrated nutrition. Nuts are high in protein, and while they do contain a lot of fat, it is largely unsaturated, the "good" fat that lowers your cholesterol. Many nuts and seeds, particularly walnuts, flax seeds and hemp seeds, contain omega-3 fatty acids, which boost your cardiovascular and cognitive health. Nuts are also a good source of fiber and antioxidants.
3. Raw vs. Roasted
Nuts serve a vital function in a raw foods diet by providing valuable protein and a healthy source of fat. But raw nuts can be part of a healthy diet for everyone, as they have distinct health advantages over roasted nuts. Roasted nuts have a longer shelf life, and many people prefer the taste of roasted and salted nuts. However roasting diminishes the nutritional qualities of nuts and entirely destroys the omega-3 fatty acids. For maximum health benefits, choose raw nuts over roasted. Purchase them in small quantities and store them in an opaque container in the fridge.
4. Sprouted Nuts
Like alfalfa seeds and mung beans, many raw nuts, including almonds or peanuts, can be sprouted. Sprouted nuts are a living, healthy food. By sprouting seeds or nuts, you activate certain nutrients that had been lying dormant. Sprouted raw nuts are also easier to digest. Soak the nuts in fresh, filtered water or lightly salted water for 12 to 24 hours, and then allow them to drain and dry. You may also dry nuts in a food dehydrator for added crunch.
5. A Word About California Almonds
In 2007, California passed a law stating that all almonds must be pasteurized, a move which upset many raw food enthusiasts, since pasteurized almonds may still be labeled as "raw." California almonds can be pasteurized either with chemical fumigants or by high-heat steam. Organic California almonds are always steam treated. These almonds are more healthful than chemically treated versions, and they should still sprout. However, whether they are technically "raw" is debatable. Another option is to buy almonds imported from Italy.
