1. Discover Soy

Time was that a dairy-restricted diet meant no milk, no ice cream and none of the other treats we have traditionally associated with the dairy case. This was bad news for people with milk allergies and lactose intolerance. Today, however, you can find dairy items made from cow's milk alternatives, one of the most popular of which is soy.

Making nut milks is an easy process, and it's a good alternative for anyone who suffers from lactose intolerance. You might even find you like it better than dairy milk.

To make nut milk, blend nuts and water thoroughly in a blender and then squeeze the liquid through a cheesecloth or strain through a very fine strainer. The liquid is the nut milk. Refrigerate this nut milk just as you would cow?s milk, and use it on cereal, in coffee, and in recipes calling for regular milk.
