3 Ways to Prepare Artichoke

1. Clean and Trim the Artichoke

Originally from the Mediterranean basin, today's artichoke is primarily grown in California and is easy to get. Select a healthy artichoke that's a deep-green color and has no brown or black-edged leaves. You can buy artichokes all year long, but the common growing seasons are spring and fall, when different varieties and sizes are easier to find.

Before you trim it, clean the artichoke with cold water and a vegetable brush, making sure that you get in between all the leaves. Next trim off the top of the vegetables leaves, approximately 1 to 1 1/2 inches from the top. Then you'll want to cut the bottom stem just above the smaller leaves. Lastly, remove the choke (the inside bulb) of the vegetable with a melon ball or pointed spoon. Simply pull back the outer leaves and dig into the artichoke with the utensil. You can also remove the choke after blanching the artichoke.

2. Blanch the Artichokes

Especially with artichokes, take the time to blanch these thick-leaved vegetables before baking or sauteing. Doing so will help get the vegetable the right consistency and can also enhance its flavor. To blanch, simply bring a large saucepan of water to a boil over medium-high heat. Meanwhile, fill a large bowl with water and ice. To get the artichokes soft, place them in the boiling water for around 30 minutes (or until tender) and then submerge them in the cold water to stop the cooking process.

3. Make Stuffed Artichokes

Prepare stuffed artichokes for a healthy and delicious meal that you can spice up with your favorite herbs. After you clean and blanch the artichokes, place them upright in a baking dish. Squeeze a bit of fresh lemon juice over the artichokes and cook them with another slice of lemon in the baking dish.

Make a simple stuffing by sauteing olive oil, minced garlic and parsley (or use any herb you like). Add fresh bread crumbs to the mixture, and spoon the mix into the middle of the artichoke (where you took out the choke) and in between the leaves. Cook this for 25 minutes in an oven preheated to 400 degrees F or until the bread crumbs turn a golden brown.

You will find the artichoke is not only fun to eat, but also good for you. It is a source of vitamin C and potassium, and it's low in sodium. Serve artichokes with meat, as an appetizer or even as the main course, with some Gorgonzola cheese on top for added variety and taste.
