According to the American Dietic Association (ADA), fructose has steadily gained popularity as a nutritive sweetener since the early 1990s. While the ADA acknowledges that little evidence supports the use of fructose as an alternative to sucrose or corn syrup, many health-conscious consumers use it instead of more conventional sweeteners. Fructose offers a few health-related benefits compared to corn syrup, high fructose corn syrup and sucrose.
Calorie Reduction
A February 2009 article published in the "Los Angeles Times" notes that, by volume, fructose is sweeter than table sugar and high fructose corn syrup. Health-conscious consumers can achieve the same level of sweetness using 5 to 10 percent less sweetener and fewer calories.
Glycemic Index
People with diabetes and reactive hypoglycemia may use fructose as a low glycemic index alternative to table sugar. Fructose creates a low spike in blood sugar levels than most other sweeteners, so it may be ideal for those on glucose-restricted diets.
Taste and Texture
The ADA states that fructose can improve the taste and texture of sweets. When combined with other sweeteners, it can increase the height and volume of baked goods. The ADA also notes that fructose gives food a pleasant scent and a pale-brown surface color.
