How to Cook with Cancer-Fighting Foods

According to the National Cancer Institute, foods that contain antioxidants such as beta-carotene, lycopene, vitamins C, E and A may offer protection from free radical damage that can result in the development of cancer. The recipes below include foods that are antioxidants. Instructions on how to cook these foods are given so that you can make powerful antioxidant dishes that may protect you from getting cancer. Organic produce is recommended because they are pesticide-free.

Step 1

Make tomato sauce with fresh organic tomatoes that have been thoroughly washed, cubed and pureed in a blender. Put 1 to 2 tablespoons of safflower oil in a pan and heat the oil briefly. Throw in 2 to 3 thinly sliced garlic cloves and saute until they turn a light beige color. Gently pour in the fresh tomato puree, stir, cover pan and simmer over a low flame for about 15 minutes. Cook cancer fighting whole grain pasta, drain and place in a casserole dish. Mix in the tomato sauce, top with some shredded mozzarella cheese and heat in the oven with the temperature set at 350 degrees until the cheese melts. Tomatoes have antioxidant power. Safflower oil and garlic have antioxidant properties as well. Mozzarella cheese contains vitamin A, which is an antioxidant.

Step 2

Stir-fry organic broccoli, carrots, red pepper and onions in a wok or pan with a tablespoon of safflower or soybean oil for 2 minutes to obtain the cancer fighting benefits of these foods. Add two sliced garlic cloves to the pan after 2 minutes and continue to stir-fry the medley on a medium to high flame for an additional minute. Pour low-sodium teriyaki sauce and soy sauce in the pan the last 30 seconds of cooking and stir. Steam brown rice in a vegetable steamer. Put the cooked brown rice on a plate, and spoon the broccoli, carrots and onions on top of the brown rice.

Step 3

Make an organic spinach and egg omelet. Drop two cracked eggs into a bowl and beat the eggs with a fork. Stir in the milk and continue to beat the eggs and milk until well blended. Put eggs and milk aside. Put a tablespoon or two of safflower oil in a pan and heat on a low to medium flame. Place the finely chopped spinach in the pan and cook until spinach wilts. Add egg and milk mixture and cook with a cover on the pan. Remove pan from flame when egg mixture is thoroughly cooked.

  • 4 to 5 organic garlic cloves, peeled
  • Safflower or Soybean oil
  • ¼ pound of whole grain pasta
  • 1 ounce of shredded mozzarella cheese
  • ½ cup of cut up organic broccoli
  • ¼ cup of sliced organic carrots
  • ¼ cup of sliced organic red pepper
  • Low-sodium teriyaki sauce, to taste
  • Low-sodium soy sauce, to taste
  • ½ cup of cooked brown rice
  • ½ cup of chopped organic spinach
  • 2 organic eggs
  • ¼ cup of organic milk
