An ulcer patient trying to find foods he can eat that won't irritate his ulcer or the lining of his stomach may become confused because he can eat certain foods on one day, but if he tries to eat the same foods at a later date, he gets sick. He needs to take precautions and make sure the fiber content is low, and that vegetables and fruits are peeled or have no acidic content in them.

Cooked Meats

Ulcer patients can eat cooked meats without the skin. Meat that has been broiled or roasted so that the fat has drained off may not cause significant problems for a person with an ulcer. Meats such as fried chicken, meatloaf and spicy sausage should be avoided. When meatloaf bakes, it releases fat. As this occurs, the loaf cooks in its own fat, which is then transferred to the dinner plate. Fried chicken presents a similar problem because it's fried in cooking oil. The oil and the breading on the chicken can aggravate an ulcer. Sausage contains spices that irritate the lining of the stomach.

Potatoes, Pasta and White Rice

Pasta made with low-fiber ingredients should present no problem for an ulcer. Because whole-grain pasta contains grain bits, it can irritate the ulcer sore and the lining of the stomach. If the nutrition information on the side of the pasta box says the fiber content is lower than 4%, a person should be fine after eating it.

Potatoes with the skin peeled may not irritate your ulcer or the lining of your stomach. An ulcer patient should never fry potatoes. Instead, potatoes should be baked or whipped. White rice will be easy on the stomach as long as spicy sauces or soy sauce is not added. Read the label and buy the variety with no fiber.

Fruits and Vegetables

As long as the fruits do not contain citric or ascorbic acids, a person with an ulcer should be able to tolerate them well. Diets can include peeled and seeded bell peppers as well as squash that has been peeled and seeded. Include butternut, zucchini, acorn and spaghetti squash as well as avocado. Vegetables and fruits high in fiber will irritate an ulcer and cause problems. Carrots should be peeled and used as a basis for salads. Seaweed has no fiber in its leaves so it can also be a part of an ulcer patient's meal plan.

Eggs and Cheese

Cheese is not acidic--in fact, it is alkaline and will help to counteract the acidity of any other food a person with an ulcer eats. Eggs are tolerated well as they are not fried. Boil, poach and scramble eggs in vegetable or canola oil, or make an omelet with cheese.
